National Caramel Day


















I had the pleasure of collaborating with Mary Remy in celebration of #NationalCaramelDay and it was so much fun! She is a busy bee making cookies to sell at Piper's as well as Midtown Market (if you're looking to snag a bite of these cookies, check out Piper's!).

Mary was kind enough to share with us her recipe for homemade caramel. If you're a baker yourself (or just love to try out new recipes) make sure to give this a go!


CARAMEL RECIPE:
Makes about 1 1/2 cups

1 cups granulated sugar 
6 tbsp butter
1/2 cup heavy cream
1 tsp vanilla extract 

  1. In a medium size pot, heat granulated sugar over medium-medium high heat until it melts and turns a dark amber color. Stir consistently so the sugar does not burn. It will start to form large clumps before it melts completely. 
  2. Once melted, add butter and stir until melted and incorporated into the sugar. 
  3. Slowly pour in heavy cream and vanilla, stirring constantly. 
  4. Keep pot over heat for another 30 seconds before turning off the burner. Let caramel cool slightly before pouring into a glass bowl or ball jar. 
  5. Once cooled, caramel will hold its shape at room temperature but is still soft.  Put in the microwave for 30 seconds to soften, and drizzle over ice cream, cakes or brownies. Enjoy!
